Holy Grails Shipyard Summer Ale
Citrus Chipotle Chicken Wings


8 Jumbo Chicken Wings
2 Chipotle Peppers
Zest of 1 medium Lemon
Zest of 1 Orange
Juice of 1 Lemon
Juice of 1 Orange
16 floz of Shipyard Summer Ale
3 tbsp of Honey
2 tbsp of Brown Sugar
Olive Oil
Salt & Pepper

Pre-heat oven to 350 degrees. Using a saute pan thats oven safe, coat with enough oil to cover the bottom, put over a medium-high heat. Dry chicken wings & sprinkle with salt and pepper. One by one with a pair of tongs put the chicken wings in the pan. Brown the chicken, turning every minute. Once brown add 13 floz of Shipyard Summer Ale, put pan in the oven. Turn chicken wings every 5 minutes. Chicken will take roughly 15-20 minutes to cook.

For the sauce: Zest the orange and lemon into a mixing bowl, cut each in half and squeeze either by hand or using a juicer, and add juice to bowl. Add in brown sugar, honey, and Shipyard Summer Ale. Cut the peppers into strips and add to rest of sauce. Stir with a wisk or spoon. Sauce is done.

After the chicken is cooked, take the wings and place them in the sauce, toss them or use the tongs to mix the chicken and sauce making sure to evenly coat the chicken. Put on plate for presentation. Pour remaining sauce over the top.

If you would like a thicker sauce, add more honey or use less Ale. If youd like it spicer or sweeter, add more brown sugar or chipotle peppers. Another option for thicker sauce would be to add the sauce to the saute pan when the chicken is done cooking, and toss or mix the chicken and sauce in the hot pan. Be sure to do this quick so the sugar and honey dont burn to the pan.
